Climate change is causing us to rethink our global nutritional habits, as research into climate-resistant grain varieties, in-vitro meat and vegan consumption trends show. The internet, social media and new types of delivery services are expanding the “range of knowledge” about food and how to obtain it.

The volume historicizes similar processes of accelerated change using the example of the phase from around 1300-1600 with phenomena such as the Little Ice Age, the Black Death, Renaissance humanism and the media revolution of the 15th century. These changed cultivation zones, but also made knowledge about agronomy, botany and dietetics more accessible and applicable. The interdisciplinary contributions examine the relationship between tradition, consumption and practical experience and reveal the mutual dynamics between theory and practice – between “book” and “field”.
